Fit Cooking Recipe: Low Sugar Berry Tart

Aloha! I love this simple recipe! It's customized since you can use any type of fruit! It only takes 10 min. to prep and 30 min to bake! So simple that I taught my 11 year old daughter, Kiana Jr. to make!

Let's start Fit Baking!

Preheat the oven to 350 degrees

Ingredients:

  • 4 cups of your favorite fruit, we used blueberries. Mixed berries are also delicious
  • Optional: Sprinkle a little coconut sugar, 1/4 tsp of stevia or plain sugar if you're naughty :P
  • 2 Tbs. cornstarch

Must Make Topping:

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup butter cut into tiny pieces (Fit Tip: I recommend using butter from healthy grass fed cows :)

Directions:

  1. Mix berries with (optional sugar) and cornstarch
  2. Divide into 4 oven-safe ramekin dishes or similar little bowls that can go in the oven
  3. Make the yummy topping: mix flour, brown sugar and butter with your (CLEAN) hands.  Using your fingers, press and break butter and flour until it looks like lumpy sand from the beach
  4. Sprinkle over the berry mixture
  5. Put the 4 dishes on a lined baking sheet (I used foil, it makes clean up easier)
  6. Bake about 35-45 min until the topping is brown and crunchy, and the berries are bubbly
  7. Cool 5 min and serve with vanilla bean ice cream
